John's Homemade Tomato Sauce

Ingredients

Ingredients
• 2 tbsp oil, ideally olive oil
• 1 onion, finely chopped
• 1 garlic clove, finely grated or crushed
• 400g roughly chopped tomatoes
• ½ cup of water
• ½ tsp dried oregano, basil or mixed herbs
• ½ tsp caster sugar
• 1 tsp vinegar (balsamic is best)

Directions

Method 1. Heat the oil in a frying pan and fry the onion over a low heat for 5 minutes, stirring regularly with a wooden spoon. Add the garlic and cook for a few seconds more. 2. Add the tomatoes, water, herbs and sugar and cook slowly for 10 minutes, stirring regularly. 3. Stir in a little more water to loosen the sauce, if needed, 4. Blitz in a blender or with a hand held blender and season to taste.
