Spinach Bundles with Miso Sauce

Ingredients

2 or 3 handfuls spinach
¼ C miso
½ C cider vinegar
2 T honey
2 T roasted peanut (or sesame or almond) oil
⅓ C mayonnaise
Toasted sesame flakes, to taste
Red pepper flakes, to taste

Directions

Rinse spinach in a colander and remove most of the excess water. Combine miso, vinegar, honey, oil and mayo and whisk until smooth. Add some red pepper flakes and adjust seasonings as required. Cook the spinach for about a minute, until just wilted. Transfer to a colander and allow to cool until you can handle it. While it’s cooling, press out any excess liquid with the back of a spoon. Divide the spinach into 4 (or however many you are serving for) and squeeze out as much of the remaining liquid as you can. Press each bundle into whatever shape you want and place on a dish atop the miso sauce. Sprinkle with sesame seeds to finish.
