Orange Parsley Salad w/ Balsamic Vinaigrette

Ingredients

·1 head lettuce of choice, chopped
·2/3 cup Italian parsley leaves only, stemmed and chopped
·3 oranges or 6 mandarins peeled, sectioned and halved
·1/3 cup sliced almonds
·1/4 cup extra virgin olive oil
·2 tablespoons white balsamic
·2 tablespoons sugar
·1/2 teaspoon salt
·1/4 teaspoon black pepper

Directions

For the dressing, combine the oil, vinegar, sugar, salt, and pepper in a small jar and shake to combine. For the salad, toss together the lettuce, parsley and orange segments in a large bowl. Drizzle with just enough dressing to lightly coat the lettuce (about 1/2 of the dressing). Toss again, then top with almonds. Serve and enjoy! Store any remaining dressing in the refrigerator.
